My name is Sarah and I'm a once-skinny-kid macaroni-eating-swimmer now dangerously turned on to CrossFit, Paleo nutrition and overall badass-ness.

I am training as a first time participant for CrossFit's 2011 Sectional Qualifier and, through this, hope to increase my physical strength and (otherwise absent) mental fortitude. No more frustration during WODs. No more "I can't". I will stop being good at one thing, and become great at everything.

Banana-Nut “Bread” REEEEE-MIX! (i.e., the remix)

This has to be my favorite concoction yet. It’s Banana Muffin-esque— like my first creation— but better. A remix, if you will:

  • 5 bananas
  • 2 eggs
  • 2 1/2 large tbsp almond butter
  • 3 large tbsp apple sauce (check label!)
  • frozen blueberries
  • 2 large dates (torn into pieces)
  • whole blueberries (as many as you like)
  • cinnamon 
  • tons of strawberries

Pre-heat oven to 350 degrees. 

Peel and mash up bananas first. Add almond butter and stir. Next, add the eggs, and mix well until very smooth and batter-like. Add the apple-sauce. Stir. Add the blueberries and (torn) dates. Stir. Add the cinnamon to your liking. Mix everything very well (have I said that enough?).



Finally, coat your appropriate cooking dish (I use casserole dish) with coconut oil (I’m trying to stay away from PAM or any other Canola/vegetable oil based cooking sprays). Add the “batter” to the dish, cut up strawberries and pile them neatly on top (basically, create a layer of strawberry— see above photo)

Wait.. thats NOT bread?!

Put dish into the oven and cook until strawberries are almost bubbling (about 30-45min). Once finished and cooled, place in the fridge for about an hour before serving.
